I'm part of the Rare Bear army, we create bears from a specific Simplicity pattern to be donated to kids with rare diseases (check out rarescience.org). I traced the pattern onto the flexable cutting mat, added the cutting details with marker, and use these to cut out my fabrics for the one of a kind bears. Sturdy, reusable, and I don't have to fuss with flimsy pattern paper.
I used them on my daughter's sewing cabinet. She doesn't have the nice, custom-fit insert for her specific sewing machine so I taped one to the cabinet surface and cut an opening for the needle and bobbin access. She now has a completely level surface for sewing that is flush with the cabinet top.
