Here in UK it is a rich fruit cake (my mother says that the way to stop the cherries from sinking to the bottom is to make sure that there is plenty of other fruit to stop them - the cake mixture is just there to hold it together
) Some people are really organised and make them about 4 months ahead and then feed them sherry or brandy, about 1 tsp per week. It is then covered with almond paste or marzipan and then royal icing, which if given long enough to dry becomes very, very hard & crunchy.
Here in Yorkshire fruit cake is served with a piece of strong cheddar cheese, and I have to admit that the flavours work really well together.
Finally got my christmas puddings in their pudding bowls for cooking this weekend just gone, but left one in the pressure cooker too long and it boiled dry
I now need a new valve for the pressure cooker, and it is just as well that I make more than one pudding at a time too since it
had been a plastic heatproof bowl (but not
that heatproof!)
