Eileen, I used to cut my binding strips at 1-3/4"!!

I was very careful to stitch a SCANT 1/4" seam allowance, and also moved my binding strip enough to the left that I could see the cut edge of the quilt peaking out on the right. Sharon Schamber's video shows you how to determine exactly what your SA should be, depending on the width of your binding strips. I now prefer the look of a little bit wider binding, and especially like the mini-piped binding that Ricky demonstrates in his grand finale DVD:
