The fabric has to be folded to the true grain first and then you even up the edges with your ruler before you start cutting your strips, otherwise, you'll get that v in the middle.
If you are cutting narrow strips, sometimes just lining up the ruler straight on the fold is not enough. I line up a second ruler lengthwise along the folded edge then butt up the cutting ruler to that.

I call this having hips in your strips. Make sure the fold in your fabric is crisp with no other bumps. Run your finger carefully along the fold and make sure it is smooth.

If you get the V in the middle then you're not lining up your ruler perpendicular to the fold of the fabric. When you lay your folded fabric on the cutting mat, lay it with the fold toward yourself. Then line up one of the lines on the ruler exactly with the fold. Then make your cut.
